Apple Porridge with Cinnamon and Cranberries

This bowl of goodness is a great low-carb version of your usual porridge and filled with satisfaction! Make a big batch and have enough brekkie for the whole week, or just as a little pick-me-up snack for the afternoon slum.

  • 2 apples, sliced
  • 1/4 tsp cinnamon
  • 2 dates, pitted
  • 1/2 lemon, juiced
  • 1/4 cup of dried cranberries
  • 1 small handful of walnuts
  • 2 tbsp shredded coconut
  • Step 1 Combine all the ingredients in a food processor, or alternatively chop the apple very finely and mix all together in a bowl.
  • Step 2 Stir in the cranberries, walnuts and shredded coconut.
  • Step 3 Enjoy!
