I was never a fan of vegan chocolate mousse, until I tried this recipe. This is seriously the real deal, you cannot taste the difference. Using coconut nectar makes this dessert lower in glucose.

- 1 large ripe avocado
- 1/4 cup or 30 grams of raw cacao powder
- 2 tbsp of coconut nectar
- 1 tbsp vanilla extract
- 1 shot of espresso
- Top with cacao nibs
Peel the avocado and put it in a food processor. Add a shot of (cooled) espresso and a splash of water. Process until very smooth.
Add the other ingredients and process further until even smoother.
Transfer to two small bowl and top with cacao nibs.
