Corn Fritters served with a South West Salad and Chipotle Remoulade

My partner just loves corn fritters, but I always thought they were pretty hard to make. Think again! These little babies came out perfectly after following a recipe from This Savory Vegan. I served them with a South West salad with vegan ranch (made the day before to thicken overnight) and some chipotle remoulade. Enjoy them for lunch the next day or have as a scrumptious dinner.

  • For the fritters
  • 1 cup flour
  • 2 cans of corn kernels, rinsed
  • 1 jalapeño diced
  • 1/4 cup parsley chopped
  • 1 tsp cumin
  • 1/2 tsp cayenne or a tsp of the chipotle in adobo sauce used for the remoulade
  • 1 tsp garlic powder
  • 1/4 cup (60ml) dairy-free milk
  • salt & pepper to taste
  • (grape seed) oil for frying
  • For the ranch
  • 1 cup vegan mayo
  • 3/4 cup plain almond milk
  • 1 tsp parsley
  • 1 tsp onion powder
  • 1 tsp garlic salt
  • 1/2 tsp dried dill
  • pepper to taste
  • For the South West salad
  • 2 crops of cos lettuce, chopped
  • 1 red onion, chopped
  • 1 can of black beans, drained and rinsed
  • 1 can of corn kernels, drained and rinsed
  • 1 punnet of cherry tomatoes, halved
  • 1 avocado, diced
  • For the chipotle remoulade
  • 1 cup vegan mayo
  • 1/3 cup vegan sour cream, or blended silken tofu with apple cider vinegar
  • 3 tbsp fresh lime juice
  • 4 tbsp chipotle in adobo sauce
  • 1 tsp salt and pepper
  • Step 1 Start with the vegan ranch the night before. Blend all the ingredients and store in the fridge.
  • Step 2 Make your chipotle remoulade by mixing all the ingredients. (You can buy chipotle in adobo sauce at Woolies in Australia)
  • Step 3 To make the salad, mix all the ingredients in a big salad bowl. Drizzle with the vegan ranch.
  • Step 4 For the fritters, combine flour, corn, jalapeño, cilantro, cumin, cayenne, garlic powder, milk, salt and pepper in a large bowl. Stir until combined.
  • Step 5 Add oil to a stir fry pan over medium-high heat.
  • Step 6 Once oil is heated, begin molding fritters. The batter will be sticky, so you coat your hands in a little oil. Form patties and fry them in the pan. Cook until browned on one side (approx. 5 minutes) before flipping and browning the other side.
  • Step 7 Remove fritters from the pan and place on paper towel lined plate.
  • Step 8 Serve!
