Mean Red Bean Burger

Yep, another burger. I still really like my Beetsteak Burger and the Tofish one, but I made this one because I had so many beans in my cup board. So let me introduce you to the Mean Red Bean Burger!

  • 1 can red kidney beans, drained and rinsed
  • 1 medium onion, chopped
  • 1 small carrot, grated
  • 2 Tbsps ground flaxmeal + 3 Tbsps water (or one large egg)
  • 2 Tbsp fresh chopped parsley
  • breadcrumbs
  • sea salt and ground pepper, to taste
  • 1 tsp thyme
  • 1 tsp cumin
  • 1 tsp liquid smoke (optional)
  • To serve:
  • Burger buns
  • Caramelised onion relish or mustard
  • Cos lettuce
  • Watercress
  • Pickled cucumber
  • Step 1 Mix the ground flax and water in a small bowl and set aside for 5 minutes to thicken.
  • Step 2 Put all the burger ingredients in a food processor, or in a big bowl and make sure to squash the beans first with a potato masher.
  • Step 3 Once everything is mixed, add the breadcrumbs (or flour) until the mixture is dry enough but still moist.
  • Step 4 Make patties from the mixture. I got about 6 out of this, so I put 3 in the freezer and made 3 burgers now.
  • Step 5 Heat some oil in a non-stick frying pan. Put the burger patties on the pan to cook. Let them cook about 3-4 minutes on each side.
  • Step 6 Assemble the burger with the lettuce, relish, watercress, pickled cucumber and pattie on a bun.
