Sriracha Jackfruit & Coleslaw Sliders (AKA “Pulled Pork”!)

YUMMM, since we’ve discovered the amazing jackfruit we have tried so many different recipes already. We love Upton’s Naturals Jackfruit, but you can also buy fresh or canned jackfruit at the Asian store and season it yourself.

What is jackfruit, you ask? This amazing fruit is a species of tree in the fig, mulberry, and breadfruit family native to South India. Jackfruit is a nutritional bonanza: it is rich in vitamins, minerals and dietary fiber. It is a viable source of minerals, such as iron, magnesium, potassium and manganese as well.
