Herbalicious Hummus

A bit of a different twist is this herbalicious hummus. I’ve used cannellini beans in stead of chickpeas and added no oil, and lot’s of left-over herbs! Still yummy and friendly for your tummy!

  • 1 can cannellini beans, rinsed
  • 1 handful parsley
  • 1 handful rocket
  • 1 handful coriander
  • bit of dill
  • 2 garlic cloves
  • juice of 1 lemon
  • 2 tbsp tahini
  • Step 1 Just mix this all in a food processor until smooth and store in an airtight container up to 5 days.

Doesn’t this hummus look too good to be true? The pinkish colour is just perfect – and so easy to make by adding beetroot! I have made some variations of hummus and dips before, but this one is a great little creation to add.
