Sun-Dried Tomato Pesto

Yum, this pesto is simply delicious. Add it to a pasta, like my home made gnocchi, or as a dip with some pita bread or crackers. Too easy!

  • 2 handfuls of fresh basil
  • 1 jar of sun-dried tomatoes packed in oil (250g approx)
  • 3 cloves garlic
  • 1 lemon, juiced
  • salt & pepper
  • red pepper flakes
  • Step 1 Mix everything in a food processor until smooth. Make sure to add the oil from the jar with sun-dried tomatoes.
  • Step 2 Serve immediately or save in an air-tight container up to a week.
