Lebanese Bean Salad served with Falafels and Pita Bread
If you’re looking for a tasty salad – look no further! Use canned beans and fresh herbs with some lemon juice for flavouring, and serve with some
pita bread, falafels and vegan tzaziki (if desired).

2 cans red kidney beans, rinsed and drained
1 can, rinsed and drained
1 small red onion, diced
1 medium cucumber, diced
1 handful chopped fresh parsley
1 handful chopped fresh dill
1 handful chopped fresh mint
¼ cup olive oil
Juice of 2 lemons
3 cloves garlic, pressed or minced
¾ teaspoon salt
Small pinch red pepper flakes
Za'atar dukka (optional)
Step 1 I cannot make this easier for you. Simply prep all the ingredients by rinsing & chopping them, and add them to a big bowl.
Step 2 Drizzle with the olive oil and lemon juice.
Step 3 Add red pepper flakes and / or dukkah if desired.
Step 4 Serve with slices of pita bread, falafels and (vegan) tzaziki. Or have the salad on it’s own!
