Mexican vegan tostadas

Mexican is one of our favourites! My boyfriend made these easy but delicious tostadas.

makes: 8 tostadas
prep time: 5 min
cook time: 15 min
total time: 20 min

INGREDIENTS:

  • 8 small corn tortillas
  • 1 cos lettuce, chopped
  • purple cabbage, shredded
  • 1 large tomato
  • Avocado
  • 1 can refried beans (make sure they are not prepared with beef broth/stock)
  • 1 teaspoon onion powder
  • 1/4 teaspoon garlic powder, ground cumin, chili powder, paprika, salt
  • 3 tablespoons almond milk or water, to thin

DIRECTIONS:

Preheat your oven to 200ºC. Place corn tortillas on a baking sheet and bake for 13-20 min, or until crispy. Flipping the tortillas halfway through baking.

Chop the the veggies.

Add the beans and seasonings to a medium saucepan. Mix and heat over medium/low until beans are warm. If needed, add almond milk or water to achieve desired consistency.

Layer the tostadas: beans, lettuce, cabbage, tomato, dressing, avocado.

Add some lime juice for an extra kick!
